Those diagnosed with celiac disease can sometimes tolerate everything from pizza baked in the same oven as gluten products to cross-contamination and even a certain amount of gluten without symptoms. Some gluten particles may not even cause harm, right?

Highly Sensitive to Gluten

Furthermore, those being highly sensitive to gluten, not diagnosed with celiac disease, but who are forced to a gluten- and wheat starch free diet to avoid getting sick, may not even be able to tolerate breathing in the air from gluten molecules, in the presence of gluten products. Nor gluten particles in the air. Skin contact with gluten can trigger reactions and cause harm, right?

Gluten Intolerance is Confusing

Yes, these two examples are extreme but only meant to highlight how complicated and confusing the understanding of gluten intolerance can be. I just hope to rise more awareness as I’m learning new things all the time as a gluten intolerance since 35 years.

Where are You on a Gluten-Free Spectrum?

I’m gluten intolerant, among those who are forced to keep a strict gluten-free diet but no celiac disease diagnosis. Cross-contamination, skin contact and easily triggered from molecules in the air is always a threat so socializing is always very challenging. I also had an anaphylactic shock in 2001, just when I arrived in intensive care, followed by acute resuscitation and 5 days on a heart-lung machine before I woke up.
